8 oz linguine
2-4 tbsp olive oil
2-3 tbsp chopped walnuts, heaping
3 minced garlic cloves
2 tbsp parsley, heaping
4 tbsp lemon juice
2-4 tbsp nutritional yeast (or vegan grated Parmesan)
black pepper, to taste
*Cook the pasta as you normally would while preparing the rest of the ingredients. When the pasta is finished, drain it and set it aside.
**Heat a pan at low/med heat and add 2 tbsp of olive oil. When it is hot, add the walnuts, garlic, and parsley. Turn the heat down to low and cook for a few minutes stirring it often.
***In a bowl, combine the pasta and the heated mixture and pour in the lemon juice. Mix well, then add the nutritional yeast (or vegan parm.) and 2 more tbsp of oil. The more yeast you add the more oil you will need to add. Sprinkle a little black pepper to taste and add more walnuts and parsley if you would like. Enjoy right away while it’s still hot. 🙂
